i got sick all of a sudden yesterday :(
started out sneezing, then a sore throat, now achy. it came on really fast...i just hope it leaves just that way.

i heard this on 'the splendid table' while riding in the jeep one day.
i had to try it.



1 onion, sliced
a few cloves of garlic, smooshed
a couple TBSP curry powder
corriander, maybe a heaping tsp
turmeric, maybe a heaping tsp
14 oz can of diced tomatoes
14 oz can of coconut milk
bag of frozen boneless, skinless chicken thighs (you could use fresh, too)


cooked til chicken is tender.

served over rice.

everyone loved it.
next time, i will maybe add some heavy cream or half n half or something to make it creamy and then add something spicy. cayenne (idunno how to spell it) or red pepper flakes.

our Easter dinner consisted of:

baked ham
fresh green beans cooked with red potatoes & some bacon for flavor
velveeta shells & cheese
glory mixed greens
cranberry sauce (yes, outta the can...we love it)
sour dough bread from the atlanta bread co. yum.
and a homemade pecan pie

oh, and some smithwick's beer :)

yes, we had lots of sodium...and will prolly awaken many tmes tonight in dire need of H2O. i will have a full glass on the bedside table :)

i forgot that i am out of aluminum foil to cover it while it roasted, so it got a bit to brown on top, but it still tastes goood :)

breakfast (ham, egg & cheese on a toasted bagle):

i made waffles, a bit of sausage & some eggs for supper last night.
i cracked my first egg and i noticed it looked a bit odd. closer inspection revealed it was a double yolked egg! cool!

i had to snap a photo. :)
i also added 2 normal sized egs in with it to show the comparison.

( oh, an egg comes out of a chicken....oh, a chicken comes out of an egg )

bbq. cooked in the crockpot for 12+ hours. stubb's bbq sace added:

we went to miso house. (on jordan lane, close to sitar)
if you live in or around huntsville, GO. it's good and the prices are really good, too!
my pics turned out horrible. bad lighting, too many people around...i didn't wanna be seen sitting my camera on top of the soy sauce to use it as a tripod for my lowlight setting!

i'll have to dig through my closet sometime to see if i can find some cd's in there. but when i do find it i'll send the file your way!

just a bit ago, alex told me not to look into the kitchen.
i was on the couch. i could hear him making all sorts of noises in there.
a few minutes pass, and he brings ( this plate over to me. )

i had a great day.
and it was wonderful to be able to receive the Eucharist with my family.

got an email a few days ago for jason. thought it was spam.
jason did a search on that email and domain, etc.
it was legit.

and the UPS guy just came and gave me a nice box of chocolates! :D

the other day, i had used about half an onion and put the rest in the fridge.
i got it out a bit ago, to use it again and this is how it looked...

krispy kreme has a new doughnut out.
100% whole wheat, glazed.
at first they are very maple-y, but they don't have maple flavoring in them.
then after a few bites, that maple flavor goes away.
they're not bad!

this cereal is GOOD.
i love anything with ginger in it. :D
got it in the "natural" section at kroger.
